Peanut Butter Cookie Bars

These cookie bars are made with peanut butter and topped with peanuts - they're perfect for peanut lovers !

The dough for these cookie bars is made with peanut butter and chopped unsalted peanuts, making these peanut butter bars a peanut lover's dream ! :)
Peanut butter cookie bars are easy to make ; they only require basic baking ingredients, and the result is a soft, chewy peanut butter cookie square.
You could also add some chocolate chips to the dough (about 100g - keep a handful on the side to sprinkle on top of the dough before baking, and stir the rest into the dough).

How to make peanut butter cookie bars :

  • Start by melting the butter with light brown sugar, powdered sugar, and vanilla sugar (vanilla sugar can be replaced by vanilla extract, in that case stir the vanilla extract in with the peanut butter, later). Set aside to cool.
  • Whisk some flour, baking powder, baking soda, and salt together. Set aside.
  • Add an egg and peanut butter to the butter/sugar mix (and vanilla extract if using). Mix until well incorporated.
  • Stir in the dry ingredients, then the chopped unsalted peanuts.
  • Press the dough into a square pan, sprinkle some chopped peanuts on top and lightly press them in (this is so they bake into the cookie bars, rather than stay on top). Bake for 25 minutes, let cool and cut into squares.

    Peanut Butter Cookie Bars
    Here is the recipe for peanut butter cookie bars :

    Ingredients :
    85g of butter
    80g of light brown sugar
    80g of powdered sugar
    1 tsp of vanilla extract or 1/2 tbsp (1 packet) of vanilla sugar
    200g of flour
    1/4 tsp of baking powder
    1/8 tsp of baking soda
    1 pinch of salt
    1 egg
    50g of peanut butter
    100g of unsalted peanuts, chopped

    Instructions :
  • Preheat the oven.
  • Put the butter, light brown sugar, white sugar (and vanilla sugar if using) in a microwave safe bowl. Microwave for 30 seconds, stir, and repeat until the butter has completely melted. Set aside.
  • In another bowl, whisk together the flour, baking powder, baking soda and salt.
  • Add the egg and peanut butter to the butter/sugar mix. Add in vanilla extract if using. Mix until well incorporated.
  • While stirring, add in the dry ingredients, then stir in about 3/4 of the chopped unsalted peanuts.
  • Press the dough into a square 8x8in (20cmx20cm) pan, lined with baking paper. Sprinkle the remaining chopped peanuts onto the dough, and lightly press them in.
  • Bake for 25 to 30 minutes, until a toothpick inserted in the middle comes out clean. Let cool before cutting into squares.

    Chocolate Chip Nutella Oat Bars

    These oat crumble bars have a hidden Nutella layer and are topped with chocolate chips to make them extra delicious.

    To make these chocolate chip Nutella oat bars, I used the same recipe as these applesauce oatmeal bars and these banana oat bars. This time, though, no fruit ! The applesauce or bananas are replaced with Nutella, and the bars are topped with chocolate chips.

    This recipe for Nutella oatmeal bars is egg-free (and you'll only need to wash one bowl when you're done making them !)

    To make chocolate chip Nutella oat bars, you'll have to combine the dry ingredients (flour, brown sugar, oats, baking powder and salt), before you add in softened butter and mix until it forms crumbs.
    Spread a little over half the dough in a pan, press with your fingers to make a base, and bake for 15 minutes.
    Take the pan out of the oven and spread some Nutella on it (I'd recommend microwaving it for about 15 seconds to make it softer and easier to spread). Add the remaining crumbs on top, the chocolate chips, and bake for another 35 minutes.
    Let the chocolate chips Nutella oatmeal bars cool completely before cutting into squares.

    Here's the recipe for chocolate chip Nutella oat bars :

    Ingredients :
    190g of flour
    150g of light brown sugar
    1/8 tsp of salt
    1 tsp of baking powder
    140g of rolled oats
    175g of butter, softened
    Nutella
    2 tbsp of chocolate chips

    Instructions :
  • Preheat the oven.
  • In a bowl, whisk together the flour, sugar, salt, baking powder, and oats.
  • Add in the butter and combine (using your fingers) until it forms crumbs.
  • In an 8x8in (20x20cm) pan covered in baking paper, spread a little over half of the mixture, and flatten it (using the bottom of a glass or your fingers) to form the base of the Nutella bars. Bake for 15 minutes.
  • Take the pan out of the oven, spread Nutella (I used about 4 or 5 tablespoons) on the base, and sprinkle the rest of the mixture on top. Add the chocolate chips
  • Bake for 35 minutes (at 150/180°C).
  • Let cool completely before cutting into bars.

    Gingerbread Snickerdoodles

    This snickerdoodles recipe uses gingerbread sugar for the coating instead of the typical cinnamon sugar. Baking soda and cream of tartar free.

    This snickerdoodles recipe uses gingerbread sugar for the coating instead of the typical cinnamon sugar. I used my go-to snickerdoodles recipe, which is baking soda free and cream of tartar free - and yes, the snickerdoodles still stay soft !

    To make the gingerbread sugar coating, you'll need a gingerbread spice mix (either store-bought or homemade - there are plenty of recipes online !). Once you have your gingerbread spice mix, the recipe is the same as any other snickerdoodles recipe : whisk together the flour, salt and baking powder. Cream the butter and sugar, add in the egg and vanilla, then stir in the dry ingredients. Shape the dough into balls, roll in the gingerbread sugar, bake for 12 to 15 minutes, and tada ! You have gingerbread snickerdoodles ! These cookies will be perfect for the Holidays.

    Ingredients :
    180g of flour
    1/4 tsp of salt
    1 tsp of baking powder
    110g of softened butter
    150g of sugar
    1 egg
    1/2 tsp of vanilla extract
    For the cinnamon sugar coating :
    3 tbsp of sugar
    1 tsp of gingerbread spice mix

    Instructions :
  • In a bowl, whisk together the flour, salt and baking powder.
  • In a separate bowl, cream the butter and sugar. Mix in the egg and vanilla extract.
  • Slowly add in the dry ingredients.
  • Put the cookie dough in the fridge for 15 minutes.
  • Preheat the oven.
  • In a small bowl, make the gingerbread coating : mix the sugar and gingerbread spices together.
  • Using an ice cream scoop or spoons, form balls with the cookie dough, and roll them in the gingerbread coating.
  • Put the cookie dough balls on a baking paper covered baking sheet, making sure not to put them too close together as the snickerdoodles will spread as they bake.
  • Bake for 12 to 15 minutes (180°C/350°F), until the edges on the snickerdoodles are golden.

    If I had to choose only one thing I love doing in December, it would be baking cookies. Cookies are so easy and quick to make, and there are so many different types ! In this post, you'll find five easy Christmas cookie recipes to try this month.

    Nougat Cream White Chocolate Chip Cookies

    I based this easy recipe for nougat cream white chocolate chip cookies on my best chocolate chip cookies ever recipe. These cookies had been on my mind for a while, and with Autumn here I finally decided that it was time to try them out. They turned out perfect ! The nougat cream adds a nutty flavor to the cookies, and the white chocolate chips are a nice addition to these chewy cookies.

    I actually cut up a block of white baking chocolate to make chocolate chunks – as I said in my chocolate chip cookie recipe post, that's what I always do. You get more chocolate per cookie bite, and it's cheaper. Win win !
    You can find nougat cream on Amazon in the US. You can also use nougat cream to make nougat cream cookie slices.

    Nougat Cream White Chocolate Chip Cookies
    To make these white chocolate chip nougat cream cookies, you have to start by creaming the softened butter and nougat cream, then mix in the sugar. Add in the egg and vanilla extract, then slowly mix in the dry ingredients (flour, salt, baking powder) before you add in the white chocolate chips. You can bake the cookies right away, or keep the dough in the fridge to bake later. Bake for 12 minutes, until the edges are a nice golden color.

    This recipe makes about 15 cookies (I use an ice cream scoop to make the cookie dough balls). The cookies will keep for up to a week in an airtight container.

    Here's how to make nougat cream white chocolate chip cookies :

    Nougat Cream White Chocolate Chip Cookies


    Ingredients :
    120g of nougat cream
    60g of softened butter
    170g of unrefined sugar
    2 eggs
    1 tsp of vanilla extract
    310g of flour
    2 tsp of baking powder
    1/2 tsp of salt
    100g of white chocolate chip or chunks

    Instructions :
  • Preheat the oven.
  • Cream the butter and nougat cream. Mix in the sugar.
  • Add in the eggs and vanilla extract, mix until well-incorporated.
  • Whisk together the flour, baking powder and salt, and gradually add them to the cookie dough. Add the white chocolate chips. Mix until well-incorporated.
  • Line a baking sheet with baking paper. Use spoons or an ice cream scoop to shape cookie dough balls, and place on the baking sheet.
  • Bake at 150/180°C (TH5/6) for 10 to 12 minutes, until the edges of the cookies are a golden color.

    Banana Oat Bars

    These oat crumble bars are full of banana flavor and are super easy to make with only a few ingredients !

    This banana oat bars recipe is the same as this applesauce oat bars recipe, only the applesauce has been switched for mashed bananas and banana slices. These banana oat squares are super easy to make, and they only require basic ingredients (flour, sugar, butter, oats, baking powder and salt, and bananas). This oat bar recipe is egg-free.
    These oatmeal banana bars will be the perfect after-school snack for Autumn !

    To make these banana oat bars, you will need to whisk together the dry ingredients (flour, sugar, oats, salt and baking powder), and then add in the softened butter. Combine using your fingers until it forms crumbs. You then have to flatten some of the mixture in a baking pan, and bake for 15 minutes.
    Mash a couple of bananas, spread over the bottom of the bars, add banana slices over the mashed bananas, and sprinkle the rest of the oat crumble on top before baking for 35 minutes.
    Keep these banana bars in a box for up to a week. I kept mine at room temperature.

    I have a giant jar of nougat cream in the pantry. That giant jar of nougat cream will expire soon, so I need to use it up. I looked up recipes online to try and find a way to use nougat cream in a recipe, unfortunately, every dessert recipe either uses actual nougat or they're recipes to make nougat cream (and I already have it so those recipes are useless to me.)

    Chocolate Chip Banana Cookies

    What could be better than chocolate chip cookies you ask ? Chocolate chip cookies full of banana flavor ! These banana chocolate chip cookies are perfect as a quick and easy snack.

    Maybe I should've named this blog A Cup of Cookies. I do seem to share a lot more cookie recipes than recipes that involve sprinkles, after all. It's just that when it comes to baking, cookies are one of my favorite things to whip up. If I had to list my favorite things in baking, sprinkles and cookies would have to share the first spot. But let's talk about these chocolate chip banana cookies now.
    This is another recipe I've used for years. I've made these banana cookies several times to get the perfect (for me anyway) recipe. I wouldn't even be able to tell you which recipe I used to make them in the first place, first because it's been so long I've forgotten, and second because I've changed ingredient measurements.
    This is the perfect recipe to make if you want to use up that ripe banana that's been seating on the counter for a week. Now, I call these cookies chocolate chip banana cookies, but I do use chocolate chunks. I've said before in this best ever chocolate chip cookies recipe post that I cut up a block of chocolate to get chunks, because it's cheaper and it's got a way better chocolate to cookie bite ratio ;) You can obviously use either.
    Now, don't expect crispy cookies. These banana cookies have a bit of a cake-like texture, and they'll stay soft and moist even after a couple days on the counter. :)

  • Bake for 10 to 12 minutes (150°C/180°C), until the edges are a golden color.

    Applesauce Oat Bars

    Applesauce oat bars are very easy to make. They'll be perfect as an afternoon snack or for breakfast.

    Random cravings are weird. I saw the box of rolled oats in the baking cupboard and instantly wanted applesauce oatmeal squares. Having never actually made oat bars before, I went looking for a recipe and found this one that originally uses strawberry jam. I wanted applesauce though, so I used applesauce for my oat bars (but I'll have to try it with jam because yum).
    These applesauce oat bars are very easy to make (and they'll be even easier to eat). They're perfect as an afternoon snack or for breakfast : they are very filling ! They only require basic ingredients and one bowl (less dishes to wash – yay !). This recipe for applesauce oat bars is also egg-free.

    Palets de Dame (French Cookies)

    Palets de Dame are a specialty from Northern France. These cake-like cookies with a rum icing require only basic ingredients.

    And another recipe from Northern France ! After tarte au sucre and coquille de Noël, let me introduce you to palets de dame.
    These cookies, just like tarte au sucre, are linked to my childhood. I remember the exact taste that the palets de dame we bought (from the same bakery we bought tarte au sucre from) had. I read a lot of recipes, before finding this one. Some had ground almonds, some said to spread a layer of apricot preserves between the cookie and the icing. I don't remember the ones I ate as a child to have had an apricot preserves layer, so I didn't write those down.

    Almond Sablés (Almond Shortbread Cookies)

    These buttery sablés (French shortbread cookies) are made using ground almonds and a couple of drops of almond extract to take the almond flavor up a notch. Only four ingredients and no eggs required !

    I've had a bag of ground almonds in the cupboard for months now ; I received it in the Vahiné box I won last Spring (which also had the chocolate caramel chips I used for these brown butter cookies). I've been wondering what to bake with the powdered almonds ever since, and I finally got around to using them (and no, they thankfully weren't expired, ha !).

    I made almond sablés ! Sablés are the French version of shortbread cookies : think roll-out sugar cookies, but more crumbly. These almond sablés only require four ingredients, and they're made without eggs ! These almond cookies are buttery and out-of-this-world delicious, believe me. I added just a couple of drops of almond extract to kick the almond flavor up a notch, but that's optional as the ground almonds already give that amazing almond taste to the sablés.

    If you're making these almond shortbread cookies, here's an important piece of advice : don't overbake them ! For me, 10 minutes in a preheated oven were enough ; the almond sablés will definitely look like they aren't fully baked, but that's how you keep them soft for days. If you bake them until they look, well, baked, they'll just become rock-hard as they cool, and that's not what we want. We want soft crumbly almond cookies, not break-your-teeth-hard cookies.

    Are you going to try them or do you still need convincing ? If you still need convincing, here goes : my little brother was the first one to taste them and he kept saying they were really good, so delicious, can I have more ? Haha ! Oh, and also : do you know how hard it is to look at the pictures I took of the almond sablés, craving one (or four) but knowing they're all gone ? It's torture. I just had lunch but I'm hungry now :(

    Here's how to make these almond sablés (or shortbread) :

    Ingredients :
    300g of flour
    230g of butter, softened
    100g of sugar
    125g of ground almonds
    Almond extract (optional)

    Instructions :
  • Whisk together the flour and sugar. Cream the butter
  • Gradually mix the flour/sugar to the butter.
  • Add in the ground almonds and a couple of drops of almond extract and knead until everything is incorporated. The dough will look very crumbly but it will come together the more you mix it.
  • Cover the dough with cling wrap and chill in the fridge for an hour.
  • Preheat the oven.
  • Roll out the dough on a floured surface using a rolling pin (about 5mm/¼ inch thick) and cut out shapes using cookie cutters. Place the cookies on a baking paper covered baking sheet.
  • Bake for 10 minutes (300°F/150°C). Don’t overbake (the cookies wouldn’t stay soft as they cool) ! The edges on the cookies should barely look golden. The cookies will harden as they cool.
